Spinach Flatbread with Caramelized Onion Apple topping

This is my new spin on a spinach and apple salad, but it’s not a salad at all. These days I’m not attempting to go low carb, as I’m trying to constantly up my veggies, and keep proportions in check overall.  This is a bit of a variation on pizza…I had made spinach bread before, but it had been quite awhile.  We had a lot of spinach to use up.  So it was time to make that bread again.  It comes together very quickly, which is great.  Just a couple minutes to blend it in the food processor, then it bakes for 20. It looks so pretty–like emerald green.  This also happens to be vegetarian and gluten free, no refined sugar, and very healthy with all that spinach!

The bread is refreshing, a little garlicky, and the topping brings a nice sweetness.  A little parmesan on top gives it a sharper, saltier flavor…and then some dried cranberries as a garnish bring some sweetness and tartness.  Overall, a great combination of flavors. A quick dinner o lunch…even breakfast…or a even a great appetizer. Onto the recipe!

Ingredients
  • Bread ingredients:
  • 7 heaping handfuls of spinach (at least a cup each)
  • 2 eggs
  • ½ cup egg whites (=4 egg whites)
  • ½ cup almond meal (or slivered raw almonds
  • 2 cloves garlic, peeled and minced
  • salt and pepper to taste
  • 1 T dill
  • 1 T parsley
  • .
  • While the bread is baking, make the topping:
  • 2 vidalia onion
  • 2-3 apples
  • a bit of parmesan to taste (maybe 4 T)
  • 2 T dried cranberries
  • 1 t basil

Instructions
  1. MAKING THE BREAD
  2. preheat oven to 400, grease a pan (I used a 12″ cast iron, but have used a cookie sheet before)
  3. pulse almonds in food processor until they become almond meal
  4. add spinach, garlic and spices and eggs, and pulse/blend
  5. add egg whites through feed tube while pulsing until combined
  6. pour into pan
  7. bake 15-20 minutes
  8. TO MAKE TOPPING
  9. Thinly slice the onions, and caramelize them over medium heat for a few minutes, then reduce to low for about 20 minutes
  10. slice the apple, and add to the onions along with the basil halfway through the onion cooking time
  11. PUTTING IT ALL TOGETHER:
  12. Cut bread into slices, and top with apple/onion mixture, parmesan and cranberries. Yum!

Notes
Note that the ‘bread’ will puff up in the oven like a souffle, because of the amount of egg.

 

What’s amazing is that I did not photoshop that green color.
