Apple Fritter Pancakes

These are amazing.

Every day for a month amazing.

Actually…maybe even breakfast for dinner amazing.  I love how the apple is equally dispersed throughout the pancakes.  And the batter is moist, tastes like soft apple cake…or fritter. Yum.

In most restaurants, apple pancakes are just plain pancakes covered in gooey sugary apple.  Not these!  Built-in apple is the way to go. And with the chia seeds, and high quality grains, these will make you feel GOOD.  As all food should.

These were loosely inspired by this recipe, by Chocolate Covered Katie.  I de-veganized them, and added a little superfood with some chia.

I liked these so much that I made them twice in a row…then I made a double batch on the weekend so we could eat it for easy breakfasts on weekdays. Hey, I’d never judge you for eating pancakes everyday!  Well, not if they’re healthy.

Apple Fritter Pancakes

Ingredients
  • ⅔ cup spelt flour
  • 6T large flake oats
  • 1 egg
  • 1T melted coconut oil (+extra for pan)
  • 1 medium apple, diced
  • 2t Cinnamon
  • 1t baking powder
  • 2t vanilla
  • ⅔ cup milk (I used almond)
  • 2T chia seeds (whole)
  • pinch salt
  • SYRUP:
  • equal parts maple syrup and flax oil
  • optional: add a little vanilla protein powder too

Instructions
  1. preheat your pan to medium, and melt a little coconut oil in it
  2. whisk together egg, vanilla, coconut oil and milk
  3. fold in flour, oats, baking powder, cinnamon and salt
  4. fold in chia seeds and apple
  5. cook ¼c scoops of batter. it’s thick so it’s best to flatten it a bit after you put it on the pan
  6. flip when edges start to look a little firm
  7. stir together syrup ingredients

And the syrup?  Makes the whole thing tastes like a candy apple!  Except that it’s not overly sweet, and won’t get stuck in your teeth! Also, the flax oil will give you an awesome dose of omega 3′s, as do the chia seeds.

I’m also thinking that maybe a silver-dollar version would be a delicious dessert…if crepes are dessert, why not pancakes?

    LOVE. These look delicious! I don’t have any flax oil but I’m sure I can fgure something else out for the sauce.

      Thanks, Kammie! Yeah, they definitely work without the flax oil. You can use straight maple syrup, or mix it with some yogurt too (I like doing that so it tones down the sweetness a little).

    I dont have spelt flour! ): can i substitute it with rye or buckwheat flour?

      I’ve never used rye flour, and I find buckwheat to have a specific taste…I’d probably recommend whole wheat or all purpose gluten-free, but I’m sure it’ll turn out whichever you try, but the flour might add more flavour than planned. Let me know how it goes!

      • I just made them with half buckwheat and half mystery flour (possibly whole wheat), I added a dash of nutmeg, ginger, and cloves and oh my god, girl thank you so much, I am in heaven! It took all my strength to put the left overs in the freezer
